In Tierra del Fuego, every meal is part of an extreme geography: king crab lifted from the icy waters off Almanza, lamb that cooks slowly on the spit, mushrooms that sprout in autumn beneath the damp lenga trees, the herbs, plants and fruits that grow in family gardens tended by local producers. Here, the table is a mirror of the territory: the fire burns differently, the wind seasons the food, the water adds its own perfume.

Austral Banquet is a journey that travels the South through its flavours. It is not a “food tour”, but an immersion in the territory where each dish becomes a story and every ingredient a living map.

The focus is on the kitchen as a way of inhabiting the land. Each meal is connected to a previous experience: walking, foraging, sailing or listening to local stories – without spectacle or luxury, but as the landscape served at the table.
